Blueberry Orange Infused Water

Is drinking soda and sugar cravings getting in between you and your health journey? If that's the case, infused water is the is the best way to cut down your sugary drink intake and sugar cravings. It is also a great way to drink more water and add flavor to your water without the artificial flavors.

Ingredients:

1/2 Orange
1/2 Lemon
Blueberries


Directions:

Add the berries, orange , and lemon to a mason jar. Fill to the top with fresh, filtered water and secure the lid. You can refill it as many times as you want.

Notes:

You can also add some mint.

Quick & Easy: Chocolate Banana Oatmeal Smoothie

Chocolate Banana Oatmeal Smoothie


This combination of flavors is just perfect. I love to make this smoothie for breakfast or when I am craving something sweet.

Ingredients:

1 Cup of Oatmeal 
2 Bananas ( I use frozen bananas)
1 Cup of chocolate almond milk (or regular almond milk and add 1 tbsp. of cacao powder)
1 Cup of ice

Directions:

Place all ingredients in a blender and blend until smooth.

Enjoy!!

Glowing Green Smoothie

This is my go to green smoothie. It is my version of the Kimberly Snyder glowing green smoothie. If you haven't heard about her, she is a celebrity nutritionist and author of the "Beauty Detox Solution". This book changed my life forever, I recommended to anyone who is new to juicing.
This is my version of her GG smoothie. 


Ingredients :

1 cup of kale 
1 one Apple 
3 stalks of celery 
1 frozen banana (this is optional, I like how it gives it a ice cream texture) 
Half of lemon or lime
1/2 cup of frozen pinneaples 
1/2 cup of coconut milk (optional) or water
Add two table spoons of grounded flaxseed for extra fiber. 

Directions:


  • Add all ingredients in the blender. One quick tip, I blend the greens first then I add the fruits, it makes the texture better. 
This is the perfect fix to start your morning, you get all the necessary nutrients in one simple smoothie. You'll be full the entire morning.

Black-Eyed Pea Gluten Free Pasta



Black-Eyed Pea Pasta



Ingredients: 

1 Quinoa pasta
1 Cup of Black-Eyed peas( previously made)
1 Onion 
2 Tomatoes 
Yellow and green peppers 
Garlic 
1 tbsp. Olive oil 
Salt 

Directions:

  • Prepare pasta as indicated in the box. In a medium sauce pan add olive oil, sauté  onions  , garlic, tomatoes, peppers for 5 minutes on medium/high heat.

  • Add black-eyed peas and cover for 3 minutes.  

Add mixture to the pasta and enjoy!

Green Bean Soup


Green Bean Soup
This cold weather calls for a warm and delicious soup. It is so easy to make and it is very nutritious.

Ingredients: 

1 l lb. of Green beans 
1 Onion
3 Carrots 
1 Knorr bouillon 
Handful of kale
Salt to taste 

Directions:

Place all the ingredients on a large pot high heat for about 30 minutes or until the green beans are soft.

Place the ingredients on a blender or food processor. Enjoy your soup!

When it comes to green smoothies, I like to keep it fun and interesting. This is my piña colada smoothie. 

Ingredients: 

Handful of kale 
Handful of baby spinach 
2 cups of frozen pineapples 
Honey 
1/2 cup of coconut milk ( you can also add cuconut water or plain water). 

Directions:
 
  • Place the greens in the blender along with the coconut milk. Add the frozen pinneaples and honey and blend until it reaches a  smooth texture. Enjoy!

Quick and Easy: Blueberry-banana toast



Blueberry-Banana Toast

Happy Monday, today I decided to share this quick and delicious breakfast idea, it takes few minutes to make and it is the perfect breakfast.

Ingredients: 

Whole wheat bread, 
Hand full of Blueberries ( I used frozen)
1banana 
1 tablespoon of Greek yogurt 
2 tablespoons of oats
Honey 

  • Put a frying pan on medium heat to warm the blueberries (I add few drops of water), add the oats and stir frequently to avoid overcooking.

  • When the blueberries and oats are warm, add honey to the mix. 

  • Add Greek yogurt to your toast, put the  blueberri/oats mixture on top. Cut the banana and put it on top of your toast. Drizzle more honey of you wish.

Double Baked Sweet Potatoes



Double Baked Sweet Potatoes with Chicken
This recipe is super healthy and delicious. It takes a little bit of time, but it is so worth it.

Ingredients:

4 sweet potatoes
2 chicken breast (shredded)
1 tablespoon of sour cream
1/2 onion diced
Cilantro
Black pepper
Provolone cheese


Preheat oven to 375 degrees F
Cut the sweet potatoes in half, place them in a sheet tray and baked for 40 minutes.


  • Remove the flesh from the potatoes to a bowl (be careful, we want the potato's skin intact), add sour cream and pepper, with a fork mash all the ingredients together ( just like if you were making mashed potatoes).
  • Place the sour cream and pepper mixture back in the potatoes skin. Add shredded chicken, a little bit of cilantro, provolone cheese and put back in the oven for 20 minutes or until the cheese has melted.

All done , I hope everyone tries this recipe because it is one of my favorites..





Quick & Easy : Veggie Burger and Salad


Veggie Burger & Salad


A quick and easy lunch, for those days where you don't have a lot of time and you need an easy and delicious lunch.

Ingredients:
Lettuce 
Cherry tomatoes
Cucumber
Morning star black bean burgers (my favorite brand)
A low calorie dressing 

Directions:

  • Put  lettuce, cherry tomatoes, and cucumbers in a bowl, add your favorite dressing.
  • For the veggie burger, I add a little bit of water to a sauce pan to heat them up.
Serve and enjoy!!
