Double Baked Sweet Potatoes with Chicken |
Ingredients:
4 sweet potatoes
2 chicken breast (shredded)
1 tablespoon of sour cream
1/2 onion diced
Cilantro
Black pepper
Provolone cheese
Preheat oven to 375 degrees F
Cut the sweet potatoes in half, place them in a sheet tray and baked for 40 minutes.
- Remove the flesh from the potatoes to a bowl (be careful, we want the potato's skin intact), add sour cream and pepper, with a fork mash all the ingredients together ( just like if you were making mashed potatoes).
- Place the sour cream and pepper mixture back in the potatoes skin. Add shredded chicken, a little bit of cilantro, provolone cheese and put back in the oven for 20 minutes or until the cheese has melted.
