Quick and Easy : Fried Plantain Salad

Fried Sweet Plantain Salad

Plantains might look like bananas, but they are actually a vegetable. In the Latin cuisine, plantains are a staple vegetable in any dish. There are so many ways you can cook plantains and  the best part is that they are super affordable.


Ingredients:


  • 2 ripped plantains
  • Mix greens
  • Feta cheese
  • Olive oil



Directions:

  • Cut your plantains , in a medium sauce pan , heat up some olive oil and fry them until they are golden.
  • Add them to your mix of greens and add Feta cheese 
The salty of the cheese brings out the sweetness of the plantains.

Strawberry Lime Infused Water


Strawberry Lime Water
Another version of infused water, I love this one because it is so refreshing and it keeps those sugar cravings away. You can also add some Stevia and make some Strawberry Limenade.

Ingredients:


  • Strawberries
  • Limes
  • Water


Directions:

  • Slice your strawberries and lime and add them  to a mason jar. 
  • Fill to the top with fresh, filtered water and secure the lid.

This is an easy morning smoothie, it is full of vitamins and antioxidants. It is  perfect way to start your week and give your body a break from all the chocolate, cookies, and  Valentine's day dinner that I know, we all had. The ingredients of this green smoothie are packed with vitamins and minerals that are going to help us feel great.


Ingredients:

  • 1 cup of coconut milk
  • Handful of Kale
  • Handful of strawberries
  • 1/2 cucumber
  • 1/2 of a ripe banana (I used my frozen bananas)
  • Flax seed
Directions:

  • Add coconut milk, kale, and cucumber to a blender. Blend until all the ingredients are well mixed.
  • Add strawberries,banana, and flax seed. Blend on high speed and serve.

  • 1 cup frozen mangos
  • 1/2 cup of coconut milk
  • 1/2 cup of ice

  • Add ingredients in the blender and enjoy!
Notes:

You can also add a table spoon of Chia seeds for some omega 3.

Quick & Easy: Buffalo Chickpea Salad

Buffalo chickpea Salad

Garbanzo beans are full of fiber and you can use them in variety of recipes. This salad is my favorite salad of all time. It is super easy to make and it is so delicious.

Ingredients:

  • Garbanzo beans (previously made)
  • Buffalo Sauce
  • 1 Onion
  • 1 clove of garlic
  • 1 tsp of olive oil
  • 1 cup of cherry tomatoes
  • Lettuce
  • Carrots to garnish

Directions:

  • Add chopped onions, garbanzo beans, garlic, and buffalo sauce in a sauce pan medium/high heat until all the ingredients are well mixed.
  • Cut lettuce , tomatoes  and add your buffalo chickpeas on top.
Notes:
you can add avocados and cheese.

Quick & Easy: Vegan Overnight Oats Parfait

We all know that breakfast is the most important meal of the day however,  it is so hard to have breakfast in the morning because we have no time. Well, this oatmeal parfait may be the perfect thing for you to do because it takes 5 minutes and you can do it the night before and have it ready to go in the morning.

Ingredients:


Oatmeal

  • 1 cup of unsweetened almond milk
  • 1/2 cup of old fashion oats


  1. Honey


Toppings





Directions:


  • Combine all the ingredients for the oatmeal in a small pot, bring to a boil. cook for 3 minutes until the oats are thick. 
  • Add the fist layer of oatmeal to your Mason Jar, then add your Chia seeds, applesauce, and granola.
  • Repeat with remaining oatmeal, applesauce and granola. 
  • Top with fresh apples, store in the refrigerator and enjoy your parfait in the morning.

Quick & Easy: Cherry Tomatoes and Mushroom Pasta

Cherry Tomatoes & Mushrooms 

Pasta is among my favorite foods because you can add whatever you like and it will still be a great meal. I know people tend to stay away from pasta because it is high on carbs blah blah blah. I think that anything in moderation is good. If you avoid pasta at all cost but you still  love it, let me introduce you to this Quinoa Pasta . It is gluten free and high in protein.

Ingredients:

1 package of pasta ( I used Quinoa pasta, but regular pasta will do)
12 oz of mushrooms
1 onion
2 cloves of garlic
1 cup of cherry tomatoes
2 tbs of olive oil
Handful of baby spinach
Salt to taste



Directions:

  • Cook the pasta in a large pot following the instructions on the package.
  • Add the olive oil to a sauce pan, add chopped onion, garlic and cherry tomatoes. Cook on low/medium heat for about 5 minutes or until the onions are brown. Add the baby spinach last.
  • Add the mix to your pasta and enjoy!
Notes:

You can add some Parmesan cheese or instead of mushrooms add some chicken.

For the past weeks, the weather has been crazy here in South Florida . It rains, then it's sunny, the next day it is cold, then it rains again. Along with the weather changes, comes the infamous flu season. This super smoothie contains contains spinach, orange, lemon and green tea. All this ingredients are full of vitamin C and antioxidants that will boost your immune system and will help you prevent the flu.


Ingredients:


  • A handful of baby spinach
  • 1 medium ripe banana ( I use my previously frozen bananas)
  • 1 apple
  • 1 peeled orange
  • 1 cup of green tea (previously brewed, I added half lemon for extra vitamin C)
  • 1 tbsp Organic Honey
  • Ice cubes


Directions:

  • Add all ingredients in the blender and enjoy!!

Healthy Tip Thursday: Freeze your Ripe Bananas

Freeze your Bananas

I admit it ! Sometimes it's hard for me to buy the right amount of produce specially since I am buying just for my fiance and I. I  find myself buying too much or too little produce in between shopping trips. And as we all know, bananas are those type of fruits are so unpredictable. One day they are green and the next day they are going bad. If you use the following method, your over ripe bananas will never go to waste.

Cut and Freeze:
  • Slice your bananas into chunks and place them in a Ziploc Baggie
  • When you’re ready to use them,  grab the bag and break apart the slices as best you can before putting  them into your blender. 
Note:

I love to use my frozen bananas in my smoothies, they add a great texture and makes them so sweet.

Vegan Cream of Mushroom Soup

Mushrooms are probably one of my favorite super-foods because they are full of nutrients, minerals , and vitamins needed to regenerate the cells in our bodies. Mushrooms are low in carbohydrates, calories, sodium and they are cholesterol and fat free. They are also high in fiber, protein, and B vitamins which helps us maintain a healthy metabolism. 

I wanted to keep this soup super "clean", so I only used plant based ingredients to keep the nutrient density at its maximum.

Ingredients:
  • 1/2 pound mushrooms, sliced
  • 1 cup unsweetened original almond milk
  • 3 cups vegetable broth
  • 1/2 small onion
  • 1 tbsp flour
  • 2 cloves garlic or garlic powder
  • 1 tbsp non dairy butter
  • Scallions
  • Salt and pepper to taste
Directions:

  • In a medium pot add butter,scallions, garlic, onions and mushrooms. Sautee for 3-5 minutes. 
  • Reduce heat and add the vegetable broth and unsweetened almond milk. Cover and simmer for 30 minutes.
  • Add the flour, stirring constantly . Cover and let it cook for another 20 minutes on low heat, until the soup has reached a thick consistency.
Notes:
You can place the soup in a food processor for a less chunky texture. 
Serve with salad and Enjoy!

Homemade Applesauce

Happy Monday!

If you have a sweet tooth like I do, you are going to love this recipe. I promise you this applesauce will taste so much better than any other applesauce you've ever had. The best part is that it requires little to no sugar. You will get an amazing dessert without all the chemicals, preservatives, and additives that most store bought applesauce have.

Ingredients:




2 pounds of Apples (peeled, cored, and cut into slices)
2 cups of water
1 tbsp of brown sugar (optional)
3 tbsp of cinnamon powder
2 cinnamon sticks
Juice of 1 lemon

Directions:

  • Placed all the ingredients in a large pot and cook over medium /low heat for 30 minutes.
  • this part is really optional, you can blend it or added to a food processor. 
  • Store in the fridge and serve by itself , with soda crackers, over pancakes, oatmeal, ice cream.

Quick & Easy: Grilled Tilapia and Avocado Salad

Grilled Tilapia & Avocado Salad
This meal is so delicious and it only takes 20 minutes.

Ingredients:

1 pound of Tilapia
1 Lemon
1 tbsp of Garlic powder
1 tbsp of Onion powder
1 tbsp of Olive Oil

Salad:

Baby Spinach
Avocado
Cherry Tomatoes
Almonds

Your favorite salad dressing

Directions:


  • Preheat grill 
  • Add all your seasonings on both sides of the tilapia fillets. 
  • Place fillets on the hot grill and cook for 5 to 6 minutes over medium/high heat. 

Notes:

You can also marinate the tilapia the day before for more flavor.
